Pasta con Aglio e Olio (Pasta with garlic and oil)

    3 to 6 cloves of garlic, minced
    1/4 cup of olive oil
    1 lb spagetti, or pasta of your choice
    grated Parmesan or Romano cheese 


   1. Heat garlic in oil.  You are flavoring the oil, rather than cooking the garlic.  Do not allow the garlic to brown.  Add some of the pasta water, if necessary, to keep the garlic from browning.

   2.  Cook pasta al dente.

   3.  Toss cooked pasta with garlic-oil mixture.  Serve with grated cheese.
