lb flank steak or round steak
of garlic, crushed
seasoned bread crumbs
2 T fresh
Pound steak until very thin.
Rub steak with small amount of oil and garlic.
Mix bread crumb, cheese, onion and parsley together. Spread
over one side of steak.
Place eggs in center of steak. Eggs can be whole, sliced or chopped.
Roll steak jelly-roll style and tie securely with cotton string.
Brown meat roll on all sides in oil.
Place rolled steak in your favorite tomato sauce recipe and simmer
for 2-3 hours, until very tender.
Remove strings, slice and serve with pasta.
