Giamona & Cartwright Families...

Almond Biscotti
 (Italian Almond Toast)
Frances (Aiello) Giamona

     5 cups flour
     3/4 cup shortening
     5 t. baking powder
     2 T. vanilla 
     1 cup chopped almonds
     5 eggs
     2 cups sugar
     1 t. salt
     2 t. almond extract 

     1. Mix dry ingredients together.
     2. Add shortening any mix in with your hands.  
     3. Add eggs, vanilla, and almond extract.
     4. If dough is not very pliable, add a little milk.
     5. Shape into oblong loaves and place on cookie sheets.
     6. Bake at 350 degree until lightly brown.
     7. Cool for about 1 hour and cut into 1/2 inch slices.
     8. Place the slices on a cookie sheet and toast in a 350 degree oven for 10-15 minutes
