Calamari with Onions
Frances Aiello Giamona

Ingredients:

     2 lbs squid
     1 large onion, sliced
     1 T oil
     salt and pepper to taste

Directions:

     1.  Clean squid.  Cut body section into rings.  Remove eyes and beak from tenacles.
     2. In a sauce pan, cook squid and onions in oil over very low heat for 1-2 minutes.  Season with salt and pepper, cover and occassionally stir contents.
     3.  Cook until onions are tender and the mixture has a moist purplish tint.
