Fried Calamari
Horace Giamona


     4-6 squid per serving
     seasoned bread crumb
     salt and pepper


     1.  Clean squid.  Cut open body cavity and pound lightly with a mallet.  Leave tenacles intact.
     2.  Beat egg(s) and season with salt and pepper.
     3.  Dip squid into egg and then bread crumb.
     4.  Fry in oil until coating is lightly brown.  Do not overcook.  Squid will roll up slightly and usually "pops" when fried.
