White Fruit Cake

     2 cups butter
     4 cups sifted flour
     1 1/2 oz. lemon extract
     1 lb. pecans
     1/2 lb. candied pineapple
     2 cups sugar
     1 lb. white raisins
     6 eggs
     1/2 lb. candied cherries 


     1. Cream butter and sugar.
     2. Add eggs one at a time and beat thoroughly after each addition.
     3. Dredge fruit in 1/2 cup of flour and add remaining portion to the butter-sugar-egg mixture.
     4. Add remaing flour and mix.
     5. Add nuts, fruit, and lemon extract and mix.
     6. Pour into well greased and floured loaf pans.
     7. Bake at 275 degrees for 2 1/2 hours.
