Giamona & Cartwright Families...

Lemon-Parmesan Rice

     2 c rice
     4 c water
     1 t salt
     juice of 1 lemon
     2 T butter
     2 T heavy cream (optional)
     1/4 c parmesan cheese, grated
     1 T lemon jest


     1.  Place rice, water, lemon juice and salt in pot with tight fitting lid.
     2.  Bring to a boil, reduce heat and simmer until rice is done, about 20 minutes.
     3.  To hot rice, add butter, cream, parmesan cheese and lemon jest.  Toss to mix and coat thoroughly.  Serve hot.

Note:  If you do not use the cream, use more butter.
