Giamona & Cartwright Families...


Pinto Beans, Texas Style

Ingredients:

     1 lb pinto beans
     1 15-16 oz can of crushed tomatoes or diced tomatoes
     3 jalepeno peppers
     1/2 lb bacon
     salt and pepper to taste
     water

Directions:

     1.  Wash and sort beans.  Soak in water overnight.
     2.  Slice jalepenos (remove seeds if you want to reduce the heat).  Cut bacon in 1-inch pieces.
     3.  Place all ingredients in a pot with cover.
     4.  Use enough water to cover beans by about 1-2 inches.
     5.  Bring to a boil.  Reduce heat and simmer until beans are tender, about 2 hours.
