Giamona & Cartwright Families...

(Shrimp) Scampi

     1 lb shrimp, peeled and deviened
     4 cloves garlic, crushed in a garlic press
     3 T olive oil
     3 T butter
     juice of 1 lemon
     zest of 1/2 lemon
     1/4 c sherry or white wine
     1/4 - 1/2 t salt
     dash of black or red pepper


     1.  Mix shrimp, garlic, and olive oil in bowl.  Marinate for 1 hour or more.
     2.  In a saute pan, melt butter over medium heat.  Do not allow the butter to burn.
     3.  Add the contents of the bowl and cook for about 2 minutes.  Do not allow the garlic to brown.
     4.  Add lemon juice, zest, sherry and seasonings.
     5.  Cook for 1-2 minutes more.  Do not overcook.
