Giamona & Cartwright Families...

Cold Garlic-Parmesan Shrimp

     1 lb shrimp
     1/4 c oil
     1/8 c of apple cider vinegar
     1 t lemon juice
     1 egg
     2 cloves garlic
     1/8 - 1/4 c grated parmesan cheese
     salt and pepper to taste

     1.  Place shrimp in boiling water.  Cook for 3 minutes.  Shrimp should be pink.  Do not over cook.
     2.  Allow shrimp to cool.  When cold, peel and devine.
     3.  To prepare sauce, in a blender, process egg, oil, and garlic until smooth and thick.
     4.  Add vinegar, lemon juice, salt and pepper and blend for 15-30 seconds more.
     5.  Stir parmesan cheese into sauce.
     6.  Toss shrimp and sauce and serve on a bed of lettuce or other greens.
