Giamona & Cartwright Families...

Hot and Sour Soup

     6 c chicken stock
     1 lean pork chop, cut in thin strips
     1 small can of banboo shoots, cut in thin strips
     1 small can of mushroom stems and pieces
     3 oz firm tofu, cut in thin strips about 2 inches long
     1 egg, beaten
     2-3 green onions, sliced
     1/4 t white pepper
     1/2 t crushed red pepper
     2 T soy sauce
     2 T rice wine vinegar
     1 T oil

     1.  In soup kettle, saute pork in oil.
     2.  Add stock, bamboo shoots, mushrooms, tofu, white pepper, crushed pepper, soy souce and vinegar and simmer for 15-20 minutes.
     3.   Stir the egg into the hot soup.
     4.  Add green onions and serve.
