Breakfast Tacquitos
Chorizo con Huevos & Papas con Huevos

Ingredients:

   Chorizo con Huevos
     1 chorizo link per serving
     1 egg per serving
     2 flour tortillas per serving

Directions:

     1.  Remove chorizo from casing and cook and crumble in a frying pan.
     2.  When cooked, drain fat and add a beaten egg.  Scramble egg and chorizo.
     3.  In a heavy skillet, heat tortillas, one at a time for about 1 minute per side.
     4.  Spoon about half of the choizo-egg mixture into each tortilla and fold over.
     5.  Serve with salsa or picante sauce.

Ingredients:

   Papas con Huevos
     1 1 small potato per serving
     1 egg per serving
     2 flour tortillas per serving
     salt and pepper to taste
    oil

Directions:

     1.  Peel and dice potatoes.  Fry potatoes in oil.  Season with salt and pepper.
     2.  Add beaten eggs to potatoes and scramble until eggs are done.
     3.  Spoon potatoes and egg mixture into warm tortillas.
     4.  Serve with salsa or picante sauce.
