Giamona & Cartwright Families...

Western Fritata

   6-8 eggs
   1 onion, chopped
   1 lb mushrooms, sliced
   1 bell pepper, chopped
   1/2 lb ham, diced
   1 T butter or oil
    1/2 c cheddar cheese
   salt and pepper to taste

    1.  Saute onions, mushrooms, and bell pepper in butter or oil.  Add ham and cook for 1-2 minutes more.
    2.  Season 6-8 well beaten eggs with salt and pepper and add to the sauted vegetables-ham mixture.
    3.  Bake in a moderate oven (350 degrees) until the eggs are set, but not dry.
    4.  Top with cheese and cook for a minute or two more until cheese is melted
