Zucchini Fritata

Ingredients:

     1 small to medium zucchini, shredded
     1 small onion, diced
     1 2-3 oz ham slice, diced
     3 large eggs, beaten
     1 T butter or oil
     salt and pepper to taste

Directions:

     1. In a skillet, saute zucchini and onion for 3-5 minutes.
     2. Add ham. Stir and cook for about 1 minute longer.
     3. Spray a covered casserole dish with non-stick cooking spray.
     4. Add beaten eggs and zucchini mixture to casserole dish. Stir to mix thoroughly.
     5. Bake in 350 degree oven until eggs are set. About 20 minutes.
     6. This makes 2 generous servings.
